Spelt!

My beautiful daughter wanted to learn to make bread. She didn't have to ask me twice.
We ground up some spelt berries and got busy. I was very proud of her. Her first go and she created an absolutely perfect loaf of 100% whole grain spelt sandwich bread! 

My favorite sandwich bread recipe using spelt flour is Frugal Farm Wife's Perfect Spelt Sandwich Bread recipe. I have made so many loaves and have never had a failure. If you are new to using heirloom grains, please give her recipe a try.

What made her think of making bread was the fact that I had decided to try my hand at making spelt pita bread. It was a significant time investment, but well worth the labor. They were so puffy and better than any pita we had previously enjoyed. We used a recipe from Karen's Kitchen Stories

We chose the option of using all fresh ground spelt flour rather than adding all-purpose. If you try this, use a digital scale rather than measuring out the flour in cups. I believe it makes all the difference.

Now a non-bread related item - We made a double batch of Minimalist Baker's Easy Grillable Veggie Burgers. These lovelies are our absolute favorite veggie burger to date. We substituted chickpeas for black beans because it is what we had on hand. Still amazing.

Fresh out of the oven! These can be grilled or fried, but we choose to bake them. They always turn out perfectly.

We served the burgers in the pitas. I can't even tell you how good it was! Try these. You will come back and thank me. I just know it!
